Best Foods Mayonnaise Jars

  MACARONI SALAD   Classic Macaroni Salad - Then you add whatever makes you happy.   1CBest Foods Mayonnaise>Combine in bowl large enough to hold salad. 2TVinegar 1TPrepared Mustard 1tSalt 1tSugar ¼tPepper   8ozSalad Macaroni (cooked & drained)>Combine with dressing in bowl. 1CCelery (sliced) ½COnion (chopped fine) 2ozPimento (from 4 oz jar)   4Eggs (hardboiled)>Quarter lengthwise & then cut in thirds. Fold in gently so as not to break up too much.   Optional: 1CGreen or Red Pepper (chopped)   I have a note that says the ratio is 1 teaspoon of sugar to each 1 tablespoon of vinegar. I need to check that out. Additionally, I would start with, at most, 1 teaspoon of prepared mustard and increase only after tasting between additions. Best Foods calls for 1 Tblsp of mustard but I have never used that much and for years I didn’t use any. Safeway used to carry smaller jars of Pimento; now, I buy the 4 oz. Jar and use about half of it. If you make a whole bag of Macaroni, do not increase the pepper and be cautious about the salt. Sometimes the first phase of the dressing tastes like salt brine. It will mellow with the addition of the other ingredients. It will quiet down considerably in 24 hours. This, however, effects the decisions you make about the flavors the first day. I usually wait until just before I serve it to make salt, pepper or mustard adjustments. Once you decide on your amounts write them in the book. Don’t make these decisions over and over again, like I do.
